Why granita works in summer

Granita is one of the few categories where the product sells itself: the transparent bowl with colour in motion acts as permanent counter merchandising, with no extra promotional material needed.

How many bowls and which flavours

One bowl is enough for a single core flavour in a medium-traffic venue. Two or three bowls give variety and parallel service at peak. Keep flavours few and recognisable: variety without turnover leads to waste.

Mix ratio and texture

A consistent mix-to-water ratio determines texture and how granita behaves in the cup. Deviations in that ratio are the most common cause of product that freezes too hard or melts too fast.

Cleaning and uptime

Daily cleaning of bowls and gaskets is a prerequisite for hygiene and equipment life. In season, a day out of service costs money; choose a supplier with technical support and available spare parts.
